I have to say I do prefer a sack being worn with its first two buttons done up... Japanese style if you will.

Bop, I'd say the Japanese favour the roll over the 3rd button but not naturally rolling to the 2nd. This gives you the option to wear it as a 3 button or leave the top undone.
I don't think you could wear that jacket in the above picture as a 3 button. It rolls too low. It would look forced. Like that picture of Coltrane.
Right, my herringbone sports coat has been forced to a 3 button and didn't look right. Then I did iron it and it naturally rolled to the 2nd button. Much better. Same with my BB sack. Other sack jackets I have do have a rolling lapel, but it's a 3/2.5, which can be buttoned up much better...
