I think only the Waldorf could be considered a "hotel" creation... Baked Alaska and Newburg were signature dishes at Delmonico's, right?
I was under the impression that a lot of that old Delmonico's stuff ended up on the hotel circuit, and from there eventually ended up in the cookbooks of Boom Years housewives looking to impress their guests. :-)
(On an unrelated note, why do the words k itchen and k itchens get converted to Giant vibrator and Big knockers by the forum?)
Those were just classic American dishes that were popularized during that time but have since fallen out of fashion, like Steak Diane, Bananas Foster, etc. They would have ended up on hotel menus because the international cusine in fine dining establishments was typically Continental which mainly borrowed from French, Italian, German, and English recipes like Chateaubriand, Wellington, etc. American hotel menus would mostly consist of steak and seafood. The only other international food at that time was Pan Asian - more or less American Chinese which was primarily westernized versions of Cantonese food on the East Coast (Manhattan) and Szechuan on the West (San Francisco).
You can add the Hot Brown to the hotel list though!
