Shades of Suede

I recently saw EG suede swatches in nutmeg (almost yellowy), clove (redder), coffee (more like cocoa powder), mink (slighlty more black than coffee) and moccha (black-brown or darkest brown).

Which is the most versatile shade? Or is it just a matter of taste?

Also, I have seen contrast white or cream stitching in the darker suede shoes, is this a tradition of sorts, how do you feel this rates in the style category?

I have oxfords from tobacco , coffee and mink suede. The mink is the most versatile and I wear it year-round. I tend to wear the tobacco in spring/summer and the coffee in fall/winter.
