Right, so I've got a pair of 1980s deadstock 501s in a 32 length so about 2 - 2.5 inchs longer than my preferred inside leg measurement.
Do I:
(a) have them taken up to length? (by a seamsperson of course)
(b) have them taken up to slightly longer than my ideal length and just turn the hem up, say half an inch?
(c) just wear them and turn or roll them up?
(b) They'll shrink a bit over time. And be more versatile in the meantime.

If you turn them up can't you just undo it and get them rehemmed if you don't like them? I know its more cost but at least you get to see them the other way if you don't like them turned up
I'm with the choir on this one. Roll them up now to see how you like it before paying anything extra. Worst case scenario, you decide you don't like the look and you get them tailored anyway, but now you'll know you made the right choice.
I have a couple pairs of jeans in a 34 length which is too long for me, but it's nice because those are my "rolled up" jeans.

By this site's terminology, I use either the "single roll" or the "double cuff" depending on how long the jeans are. Sometimes I'll have a "single roll" in cold weather but I'll roll it again for the "double cuff" in the summer to let a little breeze in.
I think the "long roll" was standard for children decades ago, who would get a single pair of jeans that were much too long with the point being that the jeans were supposed to last for years of growing. Until they grew into the jeans, kids would turn up the hem in one long cuff. The look has been adopted by modern, hipster-esque #menswear types and I think it looks silly despite it's practical origin.
I feel like jeans would be uncomfortable rolled inwardly...
I don't give much of a hoot about selvedge either way, but I'm not big on jeans to begin with. It's not something I pay attention to.
hopefully they'll look good with a single, inch-wide turn-up, to me that looks the best of the three options
Depends on the jeans,
a big turn-up suits a 50s straight leg 501 style (a la Elvis above)
but I think a 60s taper style looks better uncuffed - particularly on 'high waters'- 505s look a bit ungainly when cuffed but dead sharp with a straight hem.

My 505s are worn with a double roll, as are all my denims.

it's my stumpy little celtic legs that decide the look for me.
Jeans were invariably rolled in the days of my youth back in the '50s. However, an inseam that is only 2+ inches too long won't give you a sufficient roll for a classic '50s look.
