My trouser length is perfectly tailored for when I'm standing still - nice break at the shoe, hosiery appropriately covered etc. However, when I start walking the trouser cuffs move off the shoe and I start showing a bit of sock. Should I have them tailored a quarter inch longer, or am I just being overly picky here?

The trad approach is for some sock to show, especially if you're wearing argyles.
I wouldn't worry about it. Nothings worse than _too much_ of a break at stand-still. Taking them down a bit so the sock doesn't show when a walkin' seems to be over-doing things a bit.
I do not like a break really. I feel the pants hould just hit the shoe top. I wear my pants with a belt and they slide down a little during the course of a day which creates a break.
Savile Row tailors generally make them just wide enough to cover the laces of the shoes, which is about 2/3 the length.
All of my trousers are no-break while standing still, and some sock will be visible when walking
My ideal width is 16- 18" depending on how slim the trouser leg is.
