Off-white, to be exact. Not glaring white.
Picked up a pair today - the lightest colour pair of trousers I've had since I was 14 and did judo.
I reckon they should work well with brown, and also with navy, as well as with summer cotton sports jackets (beige, olive, tobacco). Suede shoes too. Maybe even with tweed.
If the upkeep (i.e. washing) gets to be too much of a headache, I'll dye the buggers.
Any thoughts?

Got several myself ( 501's in pure white I never tend to wear for some reason these days though ), Levi's Sta-Prest and PS cotton jeans and a really handsome pair of cords from Helmut Lang, all in various shades of off white. Works well with all colours really, esp check BDs ( e.g. red/blue/white ) I think or whatever casual short sleeved shirt or top really. The PS jeans work very well for me w/a tobacco military style jacket ( also PS ). Bright red polo shirt also nice, or pink if you're brave enough ( I am ). I could go on, but you'll get the picture, Moose. Good purchase anyway, footwear can be almost anything although I prefer burgundy or brown for shoes, trainers in interesting colourways are a nice alternative too IMHO.
i used to have pure white 501's some 17 yers back. been thinking off buying off-white ones, both jeans and cords for the next summer (i have got a pair of sand cords now so nearly off-white). i agree with alex that they look great with - say - red, navy or possibly choc brown gingham check short sleeve shirts or bright-coloured casual tops, esp. well w/ polo shirts. a maroon or red polo shirt with white or off-white jeans is a classic casual combination. greatr for the summer.
If bone counts as off white, Cheeky has some rather nice jeans that he wears in the summer from RM Williams of Australia.
I especially like him wearing them as he looks lovely in them and they are a joy to wash and iron.

just saw the best pair of (off) white jeans over the weekend at Paul Smith
it was a creamy offwhite, almost like canvas, with red stitching. really clean and simple, and it was selvedge denim. I thought the fit was great, really slim, tho probably too skinny for the tastes of most forumites here. Only thing offputting about them was the $370 pricetag for a pair of jeans that would get seldom wear. But damn they looked good on, with a pair of burgundy boots
White jeans are gr8 m8. R.M.Williams used to sell good stuff that went with there dress shirts and boots (aussie trad).
