The most I ever do is to raise an eyebrow, so sweat isn't a problem for me when I'm suited up.
I wear White shirts, but I like Blue better. Or the ol' Blue/White Candy stripe.
Pink is a nice option too.
I've never been in NYC in August, true.
I think also I just don't move very much. I sit & drink & wave my spare hand around a bit as I talk.
That's about it.
Roger Bolton made a big impression on me as a young man... He had the same mannerism & would sometimes alternate hands. I remember one meeting when he did this and some wag commented "Which hand do you use when you're telling the truth?" He laughed a lot at that one.

Some ties just look better with a white shirt...
I too am a big fan of "boring". Ditto with black shoes.
However, white is unrelentingly revealing of the quality of a shirt. Colours are a way of hiding mediocrity. A genuine quality white shirting is a thing of beauty.
